HG Cheesy-Good Cornbread Muffins

Introduction

Ingredients

1c. canned creamed corn
1/2 c. fat-free liquid egg substitute
1/2 c. fat-free sour cream
1/4 tsp. tobasco
Mix together in one bowl. In larger bowl, mix:
1 c. flour
1/2 c. yellow cornmeal
1/2 c. shredded reduced-fat cheddar cheese
1/4 c. chopped scallions
2 Tb. Splenda
1 1/2 tsp baking powder
1/4 tsp salt
Add the liquids and mix just until combined. Line muffin cups with papers or spray with nonstick spray. Fill evenly. Bake in 375 deg. oven for 20 minutes. Transfer to a rack to cool.

Makes 12 muffins.
