Curried Cauliflower with Daal


Number of Servings: 8


    1 onion, chopped
    2 garlic cloves, minced
    1 large head cauliflower, cut into flowerettes
    3 medium carrots, roughly chopped
    1 tbsp canola oil
    2 tbsp curry powder
    1 1/4 cups daal (split yellow peas), washed and sorted
    4 cups low sodium vegetable broth


Saute onion and garlic in oil over medium-high heat until onions are transparent. Add curry powder and until mixture is evenly coated. Add cauliflower and carrots and saute briefly until coated with mixture. Add daal and then vegetable broth. Bring to a boil and then lower heat, simmering for 45 minutes or until daal is soft.

Makes about 8 1-cup servings
