Lenten Tuna Lasagna

Lenten Tuna Lasagna

Introduction

This is an adaptation of a very old tuna lasagna recipe. I have removed some of the fat from the original by using water-packed tuna, 2% Velveeta, 2% evaporated milk, and 98% fat free soup. It is still rather high in sodium, however. It is easy to assemble and bake. Cover and store leftovers in the refrigerator. Reheat individual servings for 90 seconds in the microwave. Ingredients

    1 13.25 oz pkg. whole wheat lasagna
    1 clove garlic, minced
    2 medium onions sliced very thin
    3 oz baby bella mushrooms, sliced thin
    1 can 98% fat free cream of celery soup
    1 soup can 2% evaporated milk
    1 tbsp. sherry wine or white wine
    1 tsp. oregano
    1 tsp. basil
    2 cans water-packed tuna, drained
    12 oz. shredded colby jack cheese
    1 cup parmesan cheese, grated
    1 lb. Velveeta 2%, sliced


Directions

Makes 12 servings.

Place lasagna noodles in a shallow baking dish and cover with boiling water to soften slightly. Saute onion, mushrooms and garlic in a medium size saute pan sprayed with cooking spray. Add soup, milk, wine, oregano and basil. Simmer just until flavors blend.
Spray a large shallow baking dish with cooking spray. Place 4 lasagna noodles on bottom of baking dish, overlapping edges. Spread one cup of soup mixture over noodles. Crumble one half can of tuna over sauce. Place 4 oz. of Velveeta slices over tuna, spacing somewhat evenly. Sprinkle shredded colby jack cheese over entire layer. Sprinkle 1/4 cup of grated parmesan cheese over the colby jack. Repeat this order with all remaining ingredients. Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and bake 5 minute more to brown top layer. Allow to set for several minutes before cutting into serving portions.
