Sloppy Lentils

Ingredients

    1 tbsp olive oil
    1 med onion diced
    1 tbsp chili powder
    1.5 cups lentils, rinsed and picked over
    14.5 oz can crushed tomatoes
    3 cups water
    2 Tbsp soy sauce
    1 Tbsp prepared mustard
    1 Tbsp brown sugar
    1 tsp salt
    pepper to taste

Directions

Add diced onion olive oil and chili powder to a pan and saute for about 5 minutes, until onions are translucent. Combine ALL ingredients in a 4qt (or larger) crock-pot, set to low, and cook for 8 hours.

  • I have made this recipe before, but did some tweaking this time. I substituted Bragg's Amino Acids for the soy sauce, reduced the mustard by half and added 1T of molasses.
    I cooked it on high for 2 hours and then low for the remaining time. When I cooked them on low, the cooking time was 10 hours - 9/7/10
