Ingredients

    Peppers, sweet, red, fresh, .25 cup, chopped
    Onions, raw, .25 cup, chopped
    Ground Cumin , 1 tbsp
    Mushrooms, canned, .5 cup
    Knorr Spanish Rice, 1.5 cup
    Chicken Breast, no skin, 1 breast, bone and skin removed

Directions

grill chicken and cut into small pieces
Cook rice as directed omitting oil
add pepeprs, onions, cumin, mushrooms and chicken when rice is nearly done
let sit for about 5 in to simmer
