Number of Servings: 4

Ingredients

    1 large eggplant peeled and sliced into 1/2 in slices
    2cups ricotta
    4 tbs parm
    1 oz blue cheese
    2oz cheddar
    1 egg separated
    2 cups San Marzano Tomatoes
    1 Tbs garlic
    2 tbs Italian herbs separated
    1 cup mushrooms
    1 cup onions

Directions

Dip eggplant into egg white then into 1 Tablespoon Italian herbs. Bake slices at 400 for 15 minutes. Mix all cheeses and egg yolk, set aside. Mix tomatoes, garlic and herbs, set aside. Layer, starting with eggplant, then ricotta mix, then tomatoes. End with ricotta mix. Bake at 350 for about an hour.
