No-So Shrimp and Broccoli Soup

Introduction

I wanted to make Miso Soup, but my grocery didn't carry Miso so I made the soup without it. My hubby told me with no miso it had to be called "no-so" soup instead. It still makes a yummy lunch. Number of Servings: 3

Ingredients

    6 cups vegetable broth
    3 ounces somen (Japanese style) noodles
    1/2 pound shrimp, peeled and deveined
    2 cups chopped broccoli
    2 teaspoons freshy grated ginger root
    1 tablespoon low-sodium soy sauce
    1/4 teaspoon hot pepper sauce or crushed dried red peppers

Directions

Bring vegetable broth to a boil in a stock pot. Drop noodles into boiling broth and spread them across the bottom of the pan, stirring to separate slightly. Reduce heat and simmer for approximately 5 minutes until the noodles are just starting to become tender. Add prepared shrimp and chopped broccoli and bring back to a simmer. Mix grated ginger root with soy sauce and stir this mixture into the soup. Stir in hot pepper sauce (or crushed dried red peppers) and simmer just until the shrimp is cooked through and the broccoli is bright green.

Makes 3 2-cup servings
