Number of Servings: 8

Ingredients

    1 - 15 oz can Great Value (Wal Mart) Black Beans
    1 - 10 oz can Ro-Tel Original Diced Tomatoes and Green Chiles
    1/2 C Blue Ribbon Brown Rice
    1 - Small Red Onion, diced
    4-5 Tbs Garlic Cloves, diced in a jar
    1/2 tsp cumin
    1/2 tsp chili powder

Directions

Cook Rice according to directions.

Use Pam or Olive Oil in a sauce pan over LOW heat and add red onion, garlic, cumin and chili powder. Saute 2 minutes or less - still want the onion to have a bit of crunch.

When Rice is finished, add all the rest of the ingredients. Cover and continue to cook on low for about 30 minutes. Stir about every 5 minutes. You do not want it to stick. Keep covered in between stirs.
