Shrimps with Scallions and Fenugreek Leaves

Introduction

This is a nice light dish that really highlights the shrimps. I prepare it with basmati rice and an Indian Dal. If you cannot find fresh fenugreek leaves in an Indian market, substitute with fresh Italian parsley. This is a nice light dish that really highlights the shrimps. Ingredients

    1 cup scallions (green and white parts) (chopped)
    2 level TBS fenugreek leaves (chopped)
    3/4 tsp salt
    1 tsp turmeric powder
    1 tsp salt
    1 tsp red chile powder
    juice of 1 lemon
    14 oz uncooked shelled shrimps
    3 Tbs olive oil
    2 green chiles chopped)
    2 large cloves of garlic (finely chopped)
    1 inch piece of fresh ginger (finely chopped)
    3/4 cup cilantro (chopped)

Directions

Heat a fry pan to medium heat. Add oilive oil, when the oil ripples add all the ingredients except the shrimps and lemon juice. Saute for 3 minutes until the greens wilt and the spices become fragrent. Add the lemon juice and stir to encorporate completely. Add the shrimps and saute for an additional 3 minutes until the shrimp is cooked through but still moist (about 4 minutes).

Serve over basmati rice accompanied by dal.
