Mediterranean salad

Introduction

I love to eat this on a Pita. I love to eat this on a Pita.
Number of Servings: 5

Ingredients

    2 ripe tomatoes about 3 inch diameter
    1 cucumber
    1 green bell pepper
    1/4 cup fresh lemon juice
    4 tbsp Extra light olive oil
    1 large clove garlic, minced

Directions

Chop all vegetables into bite sized pieces, place in a large bowl. In a smaller bowl whisk together olive oil and lemon juice then pour over vegetables and toss. Serving size is a half cup. Makes about 5 half cup servings.

I like to eat mine in a pita w/ a bit of deli turkey. YUMM!
