Ultimate Chocolate Chip Cookie, My Makeover

Introduction

This is my favorite cookie recipe, and now it's even better! From Betty Crocker's Cookie Book, with sugar reduced slightly (1 c instead of 1 1/4), half unsweetened applesauce instead of butter, and half whole wheat flour. They still taste TERRIFIC, and are less than 100 calories each. This is my favorite cookie recipe, and now it's even better! Ingredients

    3/4 c butter + 3/4 c unsweetened applesauce
    1 c each brown and white sugars
    1 T vanilla
    2 eggs
    4 cups flour (2 of them whole wheat)
    2 t baking soda
    1/2 t salt
    2 cups coarsely chopped walnuts
    1 bag (12 oz) semisweet chocolate chips
    1 c milk chocolate chips
    1 c mini-marshmallows

Directions

Makes 8 dozen cookies (96) if half don't have nuts. Use scant tablespoon or heaping teaspoon. For nutrition information, serving size is one cookie.

Beat butter, sugars, vanilla, and eggs in large bowl on medium speed. (You can use a spoon, but your arm will be tired at the end - the dough is stiff.) Stir in flour, baking soda and salt. Mix in chocolate chips, mini-marshmallows, and nuts.

Because of the whole wheat flour, the edges will look darker than normal when the cookies are done. The middles will be slightly soft. Cook at 375 degrees for about 10 minutes. Cool for 2 minutes on cookie sheet, then transfer to cooling rack.
