Creamy Pasta with Sugar Snap Peas and Salmon

Introduction

Number of Servings: 4

Ingredients

    1 Tbsp. olive oil
    2 shallots (1/4 c. chopped)
    1/2 bell pepper, chopped
    3 med. mushrooms, sliced
    1/4 c. capers
    2 cups sugar snap peas
    3 oz. cooked salmon filet, shredded into sm. pieces
    6 oz. plain nonfat yogurt
    3 cups whole wheat pasta spirals

Directions

Cook pasta according to directions until al dente. While water is heating to boil, put olive oil into frying pan and heat pan to med. high. Saute shallots and bell pepper in olive oil until they start to soften. Add sliced mushrooms, capers, and peas. Saute for approx. 5 minutes, until peas have turned bright green and are still crispy. Remove from heat and stir in salmon. (The heat of the vegetables will warm the salmon.)
When pasta is cooked, drain it and stir in the yogurt. Add the vegetable and salmon mixture and toss to mix.
Makes 4 servings including 1 cup of cooked pasta plus the vegetables.
