IntroductionI lightened up a recipe from mom by using chicken sausage - not Emeril's, but an organic type I found - and chicken broth instead of beef. I lightened up a recipe from mom by using chicken sausage - not Emeril's, but an organic type I found - and chicken broth instead of beef.
1 package (approx 1 lb) Italian style chicken or turkey sausage
1/2 large onion, chopped
3 cloves garlic, minced
500 mL red wine (2/3 bottle)
approx. 50 oz. low sodium chicken broth
one 16 oz can tomato sauce
1-2 cups fresh spinach
2 small zucchini, sliced thin
1 package refrigerated or frozen tortellini
Stir in red wine and chicken broth and bring to a rolling boil. Stir in tomato sauce (diced tomatoes may also be used).
Once all liquids are boiling, add zucchini, tortellini and spinach. Cook for 2-3 minutes per directions on tortellini. I serve with a sprinkle of parmesan cheese on top and thin sliced garlic bread. YUM. Makes about 6 large bowls' worth.
