1 medium onion, chopped
1/4 cup whole wheat flour

1.5 lbs chicken breast cut in large strips
1 lb bag frozen chopped spinach
1 14 oz can light coconut milk

The amount of curry really depends on your taste buds an the strength and type of curry. I use several tablespoons but start with less. You can always add more.
