Chicken with Chipotle Cream

Introduction

Number of Servings: 4

Ingredients

    8 tbsp reduced fat sour cream
    3 tbsp chopped cilantro
    2 tbsp + 1 tsp lime juice
    1/2 large chipotle en adobo, finely chopped
    1 tsp adobo sauce
    1/4 tsp salt
    1 1/2 chicken breast, boneless & skinless

Directions

Marinade:
Combine 2 tbsp sour cream, 2 tbsp cilantro, 2 tbsp lime juice, 1 tsp adobo sauce and 1/8 tsp salt in a large zip-close plastic bag; add chicken. Squeeze out the air and seal the bag; turn to coat the chicken. Refridgerate, turning bag occasionally, at least 30 minutes or up to 4 hours.

Meanwhile, prepare the Chipotle Cream:
Combine the remaining 6 tbsp sour cream, 1 tbsp cilantro, 1 tsp lime juice and 1/8 tsp salt in a bowl. Stir in 1/2 - 1 tsp of the chopped chipotle to taste. Cover and refrigerate until ready to serve.

Spray the grill or ridged grill pan with nonstick spray; prepare the grill or heat the pan over medium heat. Remove the chicken from the marinade, scraping off the excess. Discard the marinade. Grill the chicken 5 inches from the heat, turning occasionally, until cooked through.

Serve with Chipotle Cream.

Makes 4 servings of 5 oz chicken & 2 tbsp cream
