Beef and Broccoli

Introduction

Ingredients

    2 tbsp. olive oil
    1 large bunch of broccoli, chopped
    4 oz. round steak, cut into strips
    1 tbsp. ginger root, shredded or diced
    1 tbsp. garlic, diced
    1/2 C. green onion, chopped
    1/2 C. carrots, cut into strips
    3 tbsp. honey
    5 tbsp. teriyaki sauce
    1 1/2 C. water
    1/4 C. Corn starch

Directions

Prepare all veggies and steak prior to heating wok or skillet. Make sure all ingredients are close by and ready to be tossed in at a moment's notice. Heat skillet on high. Add olive oil. Sautee ginger and garlic 30 seconds, then add carrots and green onion before ginger and garlic begin to brown. Add all broccoli. Stir to coat broccoli with oil then move to the edges of wok or skillet. Add steak to hottest part of skillet. Allow both sides of steak pieces to brown then add teriyaki sauce, honey, and half the water. Bring to a boil. Mix remaining water with corn starch and add to wok, stirring until it boils and thickens. Bring all ingredients back to middle of wok or skillet, cover and let cook about 5 minutes or until broccoli is at desired tenderness. Makes about 3 2-cup servings.
