Thai Chicken Coconut Stirfry

Submitted by: BERRYMAC

Introduction

A quick, delicious meal with a thai-inspired taste. Adjust the heat for your preference. You may substitute lower fat coconut milk should you wish, but I prefer the taste and texture of the full-fat version. Add more chicken stock if you want it "saucier". You may also sub in favourite veg-I've added corn, small bits of carrot, etc. A quick, delicious meal with a thai-inspired taste. Adjust the heat for your preference. Directions

Prepare your rice according to package directions. Set aside once cooked, with lid on, to keep hot.

While rice is cooking, cut your chicken into small 1" cubes. Dredge your chicken cubes into the curry powder. Heat 1 tbsp olive oil in skillet and QUICKLY sear chicken on all sides to lock in juices. Remove from pan.

Add in 1 tbsp oil and onion. Cook until softened. Add in grated ginger and cook for about 30 seconds, stirring constantly.

Add in remaining ingredients and chicken. Stir well and bring to boil-then reduce to low simmer for 15 minutes. Stir occasionally. This sauce provides 4 servings.

Serve over brown rice (1/2 cup rice is one serving). Enjoy!
