Introduction

This is one of our favorite recipes, griddle cooked or baked into a loaf, fresh or as a leftover--yum. This is one of our favorite recipes, griddle cooked or baked into a loaf, fresh or as a leftover--yum.
Number of Servings: 8

Ingredients

2 cans Honey Boy Pink Salmon--with juice
    2 eggs, slightly beaten
1.5 c. bread crumbs - I figured in 3 slices of Sara Lee's Classic whole wheat
    1/2 tsp. Cayenne
    1/2 large onion
1/2 tsp. Mrs. Dash Garlic and Herbs or your favorite herbal seasoning
    .5 tsp. black pepper
    3 Tbsp flour

Directions

Pour Salmon with juice into a large mixing bowl and flake with fork. Add other ingredients and mix together. Should be a consistency that allows the forming of patties. Spray skillet or griddle with Pam or some other non-stick cooking spray and cook patties until done through.

Or you can put into a loaf or 8X8 baking dish and bake at 350 to 400 degrees F. for 40 minutes covered, then uncovered until lightly browned on top.

Serve with favorite veggies and tartar sauce if desired. I like them all by themselves - no sauce for me.
