This uniquely rich chili combines warm spices and chocolate like a Mexican mole sauce with traditional vegetarian chili ingredients.

Number of Servings: 10

Ingredients

    3/4 cup frozen corn kernels, thawed and drained (or kernels from 1 ear corn)
    1 tablespoons extra virgin olive oil
    4 garlic cloves, finely chopped
    1 medium white onion, peeled and chopped
    1/2 jalapeno pepper, minced, more or less to taste
    1 tablespoon ground cumin
    1/2 tablespoon ground cinnamon
    1 teaspoon ground coriander
    1 teaspoon smoked or regular paprika
    1 tablespoon chili powder
    Sea salt and black pepper to taste (I add .5 tsp salt and lots of crushed red pepper)
    1 (15-ounce) can black beans, rinsed and drained
    1 (15-ounce) can kidney beans, rinsed and drained
    1 (15-ounce) can garbanzo beans (chickpeas), rinsed and drained
    3 -4 large tomatoes, diced (you can use canned if you prefer
    1 (28-ounce) can crushed tomatoes
    1 cup gluten-free vegetable broth
    1 tablespoon fresh lime juice
    2 tablespoons dark chocolate chips

Directions

In a large saucepan, heat oil over medium heat. Add garlic and cook for 1 minute, then add onion and cook until translucent, about 5 minutes. Stir in jalapeƱo, cumin, cinnamon, coriander, paprika, chili powder, salt and pepper. Cook for 1 minute, stirring frequently.

Stir in tomatoes, beans, corn, vegetable broth and lime juice. Bring to a simmer. Simmer 15 minutes,
stirring frequently. Add chocolate and stir just until melted. Taste and adjust seasoning. Serve immediately.

Makes 10-12 servings of 1 cup each
