Mexican Veggie Soup

Introduction

Delicious way to get veggies in with a zing! Delicious way to get veggies in with a zing!
Number of Servings: 7

Ingredients

    1 tsp olive oil
    1 1/2 cups black beans, rinsed
    1 1/2 cups corn, drained
    chopped onion, carrots, celery and peppers (any amounts)
    1 cup chicken broth
    1/4 cup salsa verde
    garlic, lime,salt and pepper to taste

Directions

saute onion, carrots, celery in 1 tsp olive oil
add salt and pepper & garlic to bloom
add chicken broth, black beans and corn and salsa
add lime juice and cilantro (opt)
Cook until veggies are tender
