Chicken Tortilla Soup

Ingredients

    2 large carrots, diced
    2 large stalks of celery, diced
    1 onion, diced
    1/2 t garlic powder
    Salt & Pepper
    2 T oil
    4 (15 oz) chicken broth
    2 cans diced tomatoes
    1 can green chilies
    1 pack taco seasoning
    10 corn tortillas
    12 oz. cooked chicken
    1 cup 2% milk
    12 oz cheddar cheese

    Saute first 5 ingredients in oil until tender. Add chicken broth and bring to a boil. Add both cans of tomatoes, green chilies, taco seasoning, and chicken. Stir. Break corn tortillas into small pieces and boil for 20 minutes. Stir occasionally because it will stick a little. The tortillas should be incorporated very well into the soup. Reduce heat and add 8 oz. of cheese. Boil for 10 minutes. Add milk and boil for 10 more minutes. Garnish with sour creams, cheese, avocado, etc. Serve with chips. Makes 16-1 cup servings.
