Chicken and Rice

Number of Servings: 4

Ingredients

    Chicken Breast, no skin, 2 breast, bone and skin removed
    Cream of Mushroom Soup, 2 can (10.75 oz)
    Indian, Aromatic Basmati Rice, aprox 3/4 cup, 1 serving
    Green Peppers (bell peppers), 1 cup, strips
    Peppers, sweet, red, raw, sliced, 1 cup
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)
    Mushrooms, fresh, 1 cup, pieces or slices
    Milk, 2%, 6 fl oz
    Rosemary, 2 tbsp
    Garlic, 2 clove
    Onions, raw, 1 medium (2-1/2" dia)

Directions

Dredge chicken with flour and brown it up in 1 tbsp of olive oil, when chicken if browned, set aside.
add 1 tbsp of olive oil and 1 tbsp of butter, then add peppers and onions, and spices - cook until crisp tender
re-add the chicken, pour the 2 cans of soup over it and add the milk stirring until creamy
lower heat to low and cover - simmer until chicken is cooked through and no pink is showing
serve over rice

cook rice as package directs - i use basmati rice - not instant rice
