Ingredients

    3 tbsp extra virgin oil oil (evoo)
    1 cup baby carrots chopped
    1 cup celery copped
    1/2 c. chopped onion
    3 cloves garlic
    salt & pepper to taste
    1-2 tbsp cumin
    1-2 tbsp chili powder
    32 oz fat free chicken broth
    1 can diced tomatoes (with juice)
    1 can crused tomatoes in sauce
    1 can red kidney beans

Directions

saute celery and carrots in evoo until soft. add onion, cook unitl translucent, then add garlic and cook a few more minutes. add s&p, cumin and chili powder and saute 2-3 min. cover vegetables with chicken broth, add tomatoes and beans and simmer 45 min.

Serve with fat-free sour cream, fat-free cheddar cheese and a sprinkle of fresh chopped cilantro. You can also sprinkle crisp, fried tortillas (flour or corn, your choice), but will add additional calories.
