Introduction

This is a wonderful chicken and pasta dish. If you decide to make it and think the calories are a bit high you can cut the marinade recipe in half. The ingredients listed are double of what the original recipe called for. This is a wonderful chicken and pasta dish. Ingredients

    1 cup Olive Oil
    1/2 Cup Balsamic Vinegar
6 tbsp Grey Poupon Country Style Mustard
    3 tbsp minced garlic
    8 tbsp splenda or sugar
    6 tbsp water
    pinch of cayenne pepper
    4 boneless, skinless, chicken breasts
    1lb Whole Wheat Penne Pasta
Shredded Paremesan to taste (this is not included in total calories)

Directions

Combine the olive oil, balsamic vinegar, mustard, garlic, splenda, cayenne pepper, and water. Pour into a gallon zip lock bag and add 4 chicken breasts. Marinate for at least 2hrs. (I throw it together in the morning and leave it in the fridge all day.) Grill chicken and boil pasta. Once the chicken is done slice into small bite size pieces. While the chicken is cooking put the marinade into a sause pan and bring it to a boil. Drain the pasta and mix it with the chicken and heated marinade. Sprinkle with parmesan cheese as desired. Makes 7 1 1/4 cup servings
