Introduction

A cold side dish with black beans, tomatoes, peppers and celery flavored with cilantro and vinaigrette dressing A cold side dish with black beans, tomatoes, peppers and celery flavored with cilantro and vinaigrette dressing
Number of Servings: 10

Ingredients

    2 15oz cans black beans, drained
    1 15 oz can Rotel
    1 15oz can tomatoes with garlic and onion
    (or just use regular tomatoes and a crushed garlic clove)
    2 stalks celery, chopped
    1/2 C chopped green pepper
    chopped cilantro, to taste
    4 Tbsp Balsamic vinegar
    1 tsp lemon juice
    1/4 C olive oil

Directions

Open cans, chop vegetables, mix in bowl. Best served chilled. I had to guess on the serving size, I usually have just 1/2 cup
