Tami's Salsa

Introduction

Homemade canned salsa without all of the sodium of store bought. Homemade canned salsa without all of the sodium of store bought.
Number of Servings: 40

Ingredients

    10-12 lbs tomatoes
    4 onions
    4 celery ribs
    2 green peppers
    8 jalepeno peppers
    2 tsp cayenne pepper
    2 tsp cumin
    2 tsp garlic salt
    2 tsp garlic powder
    2 tsp minced garlic
    1 tsp black pepper
    1/3 c cornstarch (disolve in vinegar)
    2 c cider vinegar

Directions

Blanch and skin tomatoes. Coarsely chop. Drain off water. Mix with rest of ingredients. Bring to a simmer, cook for at least 10 minutes - cook longer for thicker salsa. Put in clean, hot pint jars. Hot water bath for 15 minutes.
10-12 pints. 1 serving = 1/2 cup.
