Mango Barbecue Sauce

Number of Servings: 6

Ingredients

    2 Tbsp olive oil
    1 Cup onion (diced)
    1 Cup red bell pepper (diced)
    3 cloves garlic (chopped)
    1 tsp salt
    Freshly ground black pepper
    1/2 tsp ground allspice
    1/3 Cup red wine vinegar
    3 Tbsp molasses
    2 Tbsp Worcestershire sauce
    2 Tbsp lime juice
    1/4 Cup low-sodium tomato sauce
    1 Mango (about 1 1/2 cups)
    2 jalapenos, minced

Directions

Heat oil in skillet. Add onions and cook until translucent. Add red peppers, garlic, salt, pepper, and allspice. Cook for about 2 minutes more. Stir in vinegar, worcestershire, molasses, lime juice and tomato sauce. Cook for a minute more. Transfer mixture to blender. Add mango and jalapeno. Blend until smooth.

Store in refrigerator and use with meats, fish, chicken.
Makes 6 - 1/2 Cup servings

This can also be used as a marinade. The mango acts as a meat tenderizer.

**(Sodium content of recipe is less than what is listed. Low sodium tomato sauce was not an option when adding ingredients. )
