1 lb - Chicken Breast, boneless & skinless
3 tbsp - low sodium Soy Sauce
2 tbsp - reduced fat Peanut Butter
1 tbsp - Cornstarch
3/4 C - fat free chicken stock
3/4 tsp - crushed red pepper
1 tbsp - olive oil
1/2 tsp sesame oil
2) In a frying pan heat the olive and sesame oil over medium heat.
3) Dice chicken and cook thoroughly in the oils (about 5-8 minutes).
4) Add stock mixture, bring to a boil. Simmer sauce until thickened, about 8 minutes.
Serve over noodles or rice if desired.
