Introduction

I am sure a "real" recipe exists somewhere; however, one year my husband was looking for a little kick to his chicken and I threw these ingredients together without even thinking. The flavor is bold and you can adjust the heat by changing out the salsa. This is also DELICIOUS on the grill. Ingredients

    NOTE: Read "T" as tablespoon, "t" as teaspoon

    1 Chicken Breast
    2 T Chi-Chi's Medium Original Recipe Salsa
    1 slice Kraft Free Singles pepperjack cheese
    1 c water
    dash of salt (optional)
    dash of pepper (optional)

    If you use a different kind of salsa or a different fat free cheese, you will want to recalculate the nutritional information. I specifically put in the brands/type that I used to be specific to the calories.

    I did list salt and pepper as optional; however, I did include them in the nutritional information of this recipe.

Directions

Preheat oven to 350'F

Flatten the chicken breasts out using the flat side of the meat tenderizer. I do this "mess free" by putting the chicken between 2 slices of plastic wrap. Do not flatten it into a thin fillet - the purpose is to spread out the breast to give an illusion of a larger portion (psychologist in me) and also to speed up cooking time.

Place the chicken into a baking dish and add the water. Salt and pepper the chicken to taste. If you want to cut a little out of the sodium.etc - skip on the salt and pepper.

Cover the dish with aluminum foil and put in the over for 30 minutes.

After baking for 30 minutes, pull it from the oven and uncover. Add the salsa on top of the chicken (try to stay 1/4 inch from the edge - you don't want it boiling off the chicken).

Tear your slice of cheese in half and lay over the salsa.

Return the chicken uncovered to the oven for another 15 minutes or until the chicken is 100% cooked through and the cheese is melted.

Makes 2 Servings; 1 Serving = 1/2 Chicken Breast

COOK'S NOTE:
Because the chicken breasts are separate for each recipe, you can add chicken to the baking dish without increasing the water or the amount of any ingredient added to a single breast.
