Very Simple Black Bean and Tomato Soup

Introduction

I put together this recipe on a day when I hadn't been able to get to the grocery store because of the snow storms. So, the only fresh ingredients I had left were an onion and some garlic. It actually turned out pretty tasty. So if you are snowed in with mainly canned goods, give it a try. Ingredients

    Goyo - Canned Black Beans, 3.5 cups
    Campbell's Tomato Soup, 1.25 cups (1 can)
    Hunt's Natural Tomato Paste - 2 tbsp = 33 g, 1 tbsp
    Smart Balance - Omega Blend of Canola, Soy and Olive Oils, 1 tbsp
    Onions, raw, 6 tbsp chopped
    Garlic, 3 cloves
    Chili powder, 1 tsp
    Pepper, red or cayenne, 0.25 tsp
    Taco Bell Fire Sauce, 1 packet, 2 serving
    Dry Oregano, 1 tsp

Directions

Saute onions in oil until tender over low heat. Chop and add garlic. Rinse black beans and add to the pot. Add enough water to cover the beans. Bring to a simmer. Add the remaining ingredients and simmer for another 10-15 minutes.

Optional: Puree in a food processor.

Makes 5 1-cup servings.

When you have more produce in in house, try sauteing 1/2 cup chopped carrots, 2 stalks chopped celery and 1 green pepper. Adding these ingredients will make 6 1-cup servings.
