Introduction

I found this recipe in a Laleche League cookbook when I was nursing my first child. It was just delicious, but very high in fat. I re-worked it to include much less cheese, whole wheat macaroni and ground turkey. We are very pleased with the outcome and do not feel like we are missing a thing! Number of Servings: 8

Ingredients


    2 Tbsp. Canola Oil
    1 lb. ground turkey
    2 medium stalks of celery, chopped
    .5 cup onion, chopped
    2 Tbsp. chili powder
    1 15oz can chopped tomatoes
    1 cup whole wheat macaroni
    8 oz. water
    6 oz. mozzarella cheese (part skim)

Directions

Saute turkey, celery and onions in canola oil until turkey is brown and vegetables are quick tender
Sprinkle with Chili powder, stir

Add tomatoes, macaroni and water
Simmer 20 minutes or until macaroni is tender
Add cheese right before serving
