3 chicken breasts (,frozen, skinless, boneless)
2/3 a large apple, sliced into "chips"
2 cloves garlic
half a red chili pepper, diced
hearty deli mustard, slightly sweet (any brand)
1 green bell pepper
salt to taste
enough water to cover chicken
In a small pot, stir mustard into water (enough water to almost cover the chicken breasts). Add chicken. If using frozen chicken, let chicken simmer for 7 minutes on medium, then turn over. (If not using frozen chicken, simmer only 2-3 min before turning).
Top chicken with garlic, chili pepper, salt and pepper. Carefully lay sliced apples over the top of everything, keeping them balanced on top if possible. Cover and simmer on medium for 15 minutes (frozen chicken) or 10 minutes (fresh).
Be sure to use a pot small enough that the chicken fits in there snuggly, otherwise you will end up using too much water.
Turn down to low to keep warm until serving.
