Avocado Apple Salad

Introduction

Such a yummy sandwich filling. Just put this salad on a chibatta roll, top with tomatoes and lettuce and you have a very filling lunch. Such a yummy sandwich filling. Just put this salad on a chibatta roll, top with tomatoes and lettuce and you have a very filling lunch.
Number of Servings: 2

Ingredients

    1 avocado, quartered, then coarsly chopped
    3/4 c fuji apple, chopped
    1T olive oil
    2t dijon mustard
    1/4 c onion, finely chopped
    1t salt
    1t fresh ground coarse black pepper
    dash of lemon juice

Directions

In a medium size mixing bowl, mix together dijon mustard, salt, pepper and olive oil. Add chopped apple, avocado and onion. stir until well mixed and a bit creamy. Sprinkle with lemon juice to prevent browning, cover and let sit in the refridgerator for an hour. Serve on your favorite bread or roll with tomatoes and lettuce.
