Jenxie's Wheat Berry Salad

Introduction

I recently tried this recipe, it's great!

html) grew up eating fresh local foods. Her wheat berry salad, which is a feature item in her restaurant, reflects her philosophy of simple food done well. The salad makes a great side dish or main course and is perfect for a brown bag lunch or picnic.

Number of Servings: 8

Ingredients

    1 cup uncooked wheat berries
    6 cups water
    1 ˝ cups broccoli florets chopped to bite size
    1 cup shredded carrot
    1 cup diced red pepper
    1 cup raisins
    1 cup diced red onion
    2-3 cloves of chopped garlic
    2 Tablespoons Basalmic vinegar
    Salt & pepper to taste

Directions

Soak Wheat Berries overnight in large pot.

Simmer the water and berries on low rolling boil for 1 hour until soft but not split.

Rinse, drain, and cool.

Combine remaining ingredients, chill for one hour in the fridge, and serve.

Will last for 3 days in your fridge.
