Baked Pumpkin Oats

Ingredients

    1/2 c - Old Fashioned Oats
    3/4 c - Vanilla Soymilk
    1/4 c - canned pumpkin
    1/2 tsp - ground cinnamon
    1/2 tsp - ground nutmeg

    Topping
    2 tbsp - sliced almonds
    1 tsp - brown sugar
    1/2 tsp - butter

Directions

Preheat oven to 375.

Mix oats, milk, pumpkin, cinnamon and nutmeg in an oven safe dish.

Bake for 10 minutes.

While baking mix almonds, butter and brown sugar in small bowl. Sprinkle on top of the pumpkin mixture and bake another 10 minutes.
