Creamy soup. Healthy, totally yummy and nutritious! Creamy soup. Healthy, totally yummy and nutritious!

Ingredients

    1 large Butternut Squash-cut into small pieces
    2T coconut oil
    1 sm onion-chopped
    1 large clove garlic
    4 c chicken stock
    1 T fresh ginger-grated

Directions

saute onion and garlic in coconut oil. Add butternut squash and chicken stock. grate ginger to taste. cover and simmer til squash is tender. Blend in a blender and return to pot. Makes 8 servings
