Chicken Piri-Piri

Ingredients

    1/8 cup extra-virgin olive oil
    1 tablespoon cider vinegar
    1/2 jalapeño pepper, seeded and minced
    1/2 garlic clove, minced
    1/8 teaspoon red pepper flakes
    1/8 teaspoon salt
    2 (6-ounce) boneless, skinless chicken breasts

Directions

Heat grill or grill pan to high.
Whisk together oil, vinegar, jalapeño, garlic, red pepper flakes, and salt in a small bowl. Place chicken in a shallow dish. Add 11/2 tablespoons of the marinade and turn to coat. Let stand at room temperature 10 minutes.
Grill chicken, turning often, until juices run clear, about 10 minutes. Drizzle with remaining sauce (do not use any of the leftover marinade) and serve.

  • This is from the South Beach Diet 30 Minute meals cookbook. It is one of our family favorites! We shred up the chicken after it's cooked, toss it with the dressing and serve in whole wheat pita pockets with spinach or lettuce and Greek yogurt. Soooo good.! - 2/11/11
