Chicken Casserole

Introduction

Number of Servings: 4

Ingredients

    Chicken Breast, no skin
    Cream of Mushroom Soup, 1 can
    Mixed Vegetables, frozen, 1 cup
    Brown Rice, long grain, 3 cup
    Bread Crumbs, 1/8 cup
    1/4 cup water

    Dried:
    Rosemary, 1 t
    Basil, 1 t
    Mint, 1 t
    Oregano, 1t

Directions

Preheat oven to 400 degrees.

Cook brown rice. Cut chicken up into 1 inch cubes, sprinkle all herbs on top and let 'Marinate' while rice is cooking. Mix water, rice, vegetables, chicken, and soup in casserole dish. Dust with bread crumbs, bake for 30 minutes.

Makes about 4- 1.5 cup servings.
