Introduction

A friend brought these to a gathering and what few were leftover, were practically fought over. A big hit with those that don't care for raisins.

Martha says, "Cherry-oatmeal cookies are a nice twist on a classic. Serve these at your next gathering, or make a batch and slip one into your loved one's lunch bag."

* Apple butter substituted for unsalted butter in the nutritional information.
* If dried cherries are too expensive, try using cherry flavored Craisins.

Ingredients

    Makes about 4 dozen.

    1-1/4 cups all-purpose flour
    1-1/2 tsp. ground cinnamon
    1 tsp. baking soda
    1/4 tsp. freshly grated nutmeg
    1/2 tsp. salt
    1 cup packed light-brown sugar
    1/4 cup honey
    2 large eggs
    1-1/2 tsp. pure vanilla extract
    3 cups Quaker Old-Fashioned Rolled Oats
    1 cup dried cherries (or cherry flavored Crasins)

    1 cup apple butter (for healthier alternative)
    *or*
    1 cup (2 sticks) unsalted butter, softened

Directions

Makes about 4 dozen cookies
(Nutritional info. is based on 1 cookie/serving)

1. Preheat oven to 350*F (or 177*C). Use a silpat non-stick baking mats or parchment paper on your cookie sheets for best results.

2. In a small bowl, whisk together the flour, cinnamon, baking soda, nutmeg, and salt; set aside.

3. Cream [apple] butter, sugar, and honey. Beat on medium-high speed until light and fluffy, about 4 minutes.

4. Add the eggs and vanilla to above and beat to combine.

5. Slowly add the flour mixture, mixing on low just until incorporated.

6. Stir in oats and cherries by hand.

7. Scoop tablespoon sized drops onto a cookie sheet.

8. Bake 10 minutes. Watch very closely the last 2 minutes, they go from done to over done very quickly.

9. Allow to cool for a few minutes on the cookie sheet before moving to a cooling rack.
