Chicken Fajitas (OAMC)

Introduction

This is a ONCE A MONTH COOKING Freezer recipes. I mix everything together but the onions, green peppers tortillas, cheddar cheese and freeze in a freezer bag. Then on the day before I want to use it. I take it out to thaw and marinade in refridgerator. You can top with sour cream and salsa but be sure to count them! This is a ONCE A MONTH COOKING Freezer recipes. Ingredients

    Cheddar Cheese, 1 cup, shredded
    Onion powder, 1 tsp
    Pepper, black, 1 tsp
    Olive Oil, 2 tbsp
    Lime Juice, 0.12 cup
    Garlic, 1 tsp
    Onions, raw, 1.50 cup, sliced
    Green Peppers (bell peppers), 1.50 cup, strips
    Soy Sauce, 0.25 cup
    Chicken, Perdue Chicken breasts, 3 serving
    Tortillas, MISSION, flour tortilla, 8 inch, 8 serving
    worcestershire sauce, 3 tsp

Directions

Assembly Instructions: Cook chicken breasts and cut up (or you can use a cooked whole chicken, cut up). Place in freezer bag. Mix all dry ingredients (except tortillas and cheese) then put onto chicken in the bag. Shake or mix with hands to "rub" seasonings on to chicken making sure to coat all pieces of chicken. Mix lime, worcestershire sauce, soy sauce, and oil and pour on top of chicken in bag. Shake bag, press out all air and seal and label freezer bag.

Serving Directions: Thaw in refridgerator overnight. Allowing to marinade during the day. Cut up onions and green peppers. Place meat mixture and onions and peppers into a frying pan heat until vegetables are tender and meat is warm. Place a generous amount of meat mixture in a warm tortilla and top with cheese.

  • I thought I already did this so if it double posts i'm sorry. My husband absolutely loved this. I thought it was to strong as it was hard to figure out how much to add, there were no measurements listed. All in all very yummy. I will definately be making this again. - 5/24/09

    Sorry about the measurements. I will add them as soon as I can I have to tell you though. The way my daughter did this it was exceptional She took all the dry ingredients and rubbed them on the chicken then wrapped it in paper towels and dipped in wet ingredient. Put in ziploc and let marinade.
