My version of potato salad My version of potato salad
Number of Servings: 8


    - 4 potatoes - quartered boil until tender
    -3 eggs- hard boil then chop up
    - 5 little carrots
    -1/4 cup of chopped onion
    -1/4 cup celery
    -1/4 cup of green bell pepper
    -pickles : chop up according to taste
    -1/3 cup of Kraft Light Mayonaise
    -2 or 3 TBSP of vinegar
    -add in splenda to taste


Boil the potatoes and carrots together. Boil the eggs in another pot. Chop all the veggies and pickles to size you like.

In a separate bowl or container, put in mayonnaise, splenda, and vinegar . Mix according to taste. I sometimes have to add either more vinegar or more splenda. Then add the dressing to the salad. Either eat warm or cold.
