Sticky Roasted Chicken (OAMC)

This chicken is a slow cooking favorite. I think it is better than those chickens you get at the supermarket when your in a hurry for something for dinner. This is absolutely the best once of month cooking secrets. I usually cook several roasting chicken on my cooking days. One I use for that night and the other I use the chicken meat for different recipes and casseroles that I freeze. It is said that a 3lb roaster will yield about 2 lbs of meat. I usually use a 4-5 lb roaster but i don't use all the meat cause I always make a soup with the bones and I like the extra meat in my broth! So I estimate my recipe at about 30 oz of meat. Ingredients

Paprika, 1 tsp
*Onion powder, 1 tsp
Thyme, ground, 1 tsp
Pepper, black, 1 tsp
Garlic powder, .5 tsp
Perdue Whole Chicken, 30 oz
Salt, 2 tsp
Pepper, red or cayenne, 2 tsp
Directions
In a small bowl, throughly comcbine all the spices. Perpare chicken by removing giblets from chicken. Rub the spice mixture both inside and out of chicken. Making sure to evenly distribute seasons.
Roast uncovered at 275 degrees for 5 -6 hours (Yes, that is right, ignore pop up thermometer) After the first hour baste the chicken occasionally.
To Freeze: This can be frozen with jsut the spice rub one before cooking, but I prefer to make several of these and cook them completely and freeze fully cooked. I take the meat off and bag with some of the juices in the bag. This keeps it moist when reheating. I just put all in a microwave safe dishe and heat in microwave.
