Cauliflower Soup, Italian Style

Ingredients

    2 tbsp olive oil
    1 onion, chopped
    1 tablespoon garlic
    1/2 tsp red pepper flakes
    1 medium head cauliflower, broken
    Salt and freshly ground pepper
    4 cups vegetable stock (we used our homemade version)

Directions

Put half of the oil in a saucepan or broad, deep casserole over medium heat. When hot, add the onion and cook, stirring occasionally, until softened and just begins to brown, about 10 minutes. Stir in the garlic, red pepper flakes, cauliflower, and some salt and pepper and continue to cook, until the cauliflower glistens, 3-5 minutes. Add the stock and stir. Bring to a boil over high heat. then adjust the heat so the mixture simmers. Cook until the cauliflower is tender but not falling apart, 10-15 minutes.

Taste and adjust seasoning, then stir in remaining oil. Serve immediately with croutons, shredded cheese, sliced green onions, or your favourite soup topping.
