Potatoes are higher in potassium that bananas. I keep them a part of my diet because it's a nutrient I seem to be short of consistently. Plus my husband's a meat and potatoes guy. Ingredients

5 medium potatoes, peeled and chopped
1 Tbsp light butter spread
1 tsp olive oil
1 tsp minced garlic
1/4 cp milk, 1%
4 Tbsp light sour cream
1/4 cp 2% shredded mexican 4 cheese
1/4 tsp kosher salt
1 tsp pepper
1/4 tsp cayenne pepper, optional
Directions
Serves 4 at 1 cup servings
Place potatoes in sauce pan and add cold water to cover. Cook until tender. Meanwhile, melt light butter spread and olive oil in small fry pan. Add garlic and cook until lightly browned.
In microwave safe mixing bowl, add milk and heat for about 25-30 seconds. Mix in seasonings, cheese, and garlic with light butter. Drain potatoes and add to bowl. Beat until desired consistency. Stir in light sour cream and enjoy.
