IntroductionGreat side dish that is filling but not too heavy. Great side dish that is filling but not too heavy.
2 cups red potatoes (1 small potato per person diced)
1 tbsp EVOO
1/4 tbsp cayenne red pepper (optional)
1/2 package of Lipton Onion soup mix (beefy flavor works too)
dash of salt (optional)
* Wash potatoes and dice into small chunks similar to a crouton size. Rinse and drain in cold water.
*Add EVOO and toss with your hands.
*Add onion soup mix and cayenne then toss again.
*PAM a baking dish and form an even layer of potatoes.
*Sprinkle a small pinch of salt over potatoes if desired.
*Bake uncovered for about 20-25 minutes or until desired color is reached.
--Makes 4 1cup servings.
