3 cups large oat flakes
1/2 cup freshly ground flaxseeds
3 packets of stevia or splenda
1/2 cup egg whites, beaten
2 cups applesauce, unsweetened
5 scoops protein powder (any flavor) - (strawberry works well)
1/2 cup fresh berries (blueberries work well)
1/4 cup crushed or whole almonds OR natural peanut butter OR almond butter (i use natural peanut butter)
1 tsp baking powder
flavor - vanilla, cinnamon, nutmeg all spice (i use cinnamon)
2. in a separate bowl, combine egg whites, applesauce and stevia. stir well until blended.
3. stir liquid mixture into dry ingredients and mix well. the consistency will be thick and similar to cookie dough.
4. spread batter onto a baking sheet coated with non-stick spray. use a 9x12 baking dish if you prefer thicker bars. bake until edges are crisp and browned (about 15-20 mins depending on bar thickness)
5. cut into 12 bars and refrigerate in air tight container
do not over cook bars.
