Introduction

One serving = three meatballs (golf ball sized)
Extra lean turkey meat and whole grain bread crumbs make this a healthier version of an Italian favorite, and the sausage adds texture, spice and tons of flavor without adding lots of calories.

1/2 c. whole grain bread crumbs (I just toasted and crumbled up a few slices of what I had in the house, the more grainy the bread the better)

Directions

Soak breadcrumbs in water and drain before adding to rest of ingredients. Saute onion and garlic till soft and add to bread mix. Dice up the sausage (preferably without the skin) and add. Add in the turkey, parsley, chives and egg. Mix well. Season with salt and pepper to taste (keep in mind that the sausage is quite salty, and you'll be serving them with a sauce, so you don't need much)
Form the mix into golf ball sized balls. If you want to make them a little less sticky you can lightly roll them in whole wheat flour before cooking.

Pour about 1/4 c. light cooking oil (canola) into a pan and heat. Panfry the meatballs till evenly browned, abt. 7 min., or bake at 370 for 15m for a lower fat version.

Serve with whole grain pasta, marinara sauce and a salad for a hearty, healthy meal
