Introduction

An awesome, filling low-cal vegan soup great for anyone...vegans and meat-eaters alike! Mix and match your own favorite veggies/beans or make with mine! :)

Number of Servings: 12

Ingredients

    2 tbsp olive oil
    minced garlic (to taste, I like about 4-6 tbsp)
    1 large onion
    2 cups chopped celery
    2 cups chopped carrots
    2 cups chopped zucchini
    2 cups chopped yellow squash
    1 12 oz can low sodium yellow corn (rinsed and drained)
    1 12 oz can garbonzo beans (rinsed and drained)
    1 12 oz can black beans (rinsed and drained)
    2 12 oz cans of kidney beans (rinsed and drained)
    1 12 oz can of tomato sauce
    1 28 oz can of diced, seasoned tomatoes
    6 cups vegetable broth
    4 Bay leaves
    2 tsp smoked paprika (or to taste)
    2 tsp oregano (or to taste)
    2 tsp ground corriander (or to taste)
    2 tsp marjoram (or to taste)
    salt/cracked pepper to taste
    1 package Boca Ground Crumbles (optional)

Directions

Serves at least 12 (freezes VERY well)- about 2 cups each.

In a large soup pot, warm olive oil on medium heat. Add onion, celery and garlic and sautee until translucent. Add seasonings, chopped carrots, zucchini, squash salt and pepper and cook until slightly tender, stirring occasionally. Add corn, beans, tomatoes, tomato sauce and vegetable broth and mix well. Simmer for 15-20 minutes, stirring occasionally. While soup is simmering, brown Boca Crumbles in a skillet. Add crumbles to mixture and simmer for another 10 minutes or so. Let cool and enjoy! :)
