Number of Servings: 6

Ingredients

    6 bell peppers
    2T olive oil
    1 small onion
    1/2 cup chopped green onions
    1/2 cup chopped mushrooms
    1/4 cup grated parmesan/romano cheese
    2 slices white bread (sara lee 45 cal)
    3 eggs
    2 clove garlic
    1/2 cup italian bread crumbs
    1/2 lb ground beef
    dash of oregano, basil, salt, and pepper

Directions

1. cut tops off bell peppers, remove insides, boil for 5 min-drain
2. sautee onions, scallions, minced garlic in olive oil, add meat and brown
3.shred moistened bread with fingers into skillet. add mushrooms and a little water, cheese, seasoning, and breadcrumbs
4. remove from heat and stir in eggs, working quickly-return to heat for 5 min
5. fill peppers, sprinkle with breadcrumbs, dot with butter (optional), and bake 15 min at 350 degrees

serves 6-1 pepper/person
