Chicken with White Sauce and Onions

This is a recipe I think most people already create at home; however, consider this a documented version here on Spark People - great flavor, tender juicy chicken, and only 146 calories per serving! Number of Servings: 6

Ingredients

    3 boneless, skinless chicken breasts
    1 can Campbell's Healthy Request Cream of Mushroom Soup
    1/2 c Prairie Farms Fat Free Sour Cream
    1 med onion, sliced and broken into rings
    dash of pepper (for each chicken breast)

Directions

Preheat oven to 400'F

Using a meat mallet, pound out the chicken to 1/2 inch fillets. You can easily do this by putting the chicken between 2 pieces of plastic wrap (no mess, easy clean up!)

Place the chicken in a 9x13 baking dish.

Add a dash of pepper to each chicken breast. It does not take much unless you like your chicken with a LOT of bite.

In a bowl, mix together the soup and the sour cream. Add enough water to make it loose enough to spread across the meat.

Add a dollup of the sauce to each piece of meat and spread it over the top.

Place the onion rings across the top of the chicken.

Bake for 45 minutes or until done (and tender juicy).

Makes 6 servings; 1 serving = 1/2 chicken breast.
